Title: Italian Sausage Empanadas

Yield: 20 Empanadas

1lbBulk Italian-sausage
1cnPizza sauce; (14oz)
2cnRefrigerated flaky biscuits
  . (10oz each)
4ozMozzarella cheese; shredded
  . or cut into small cubes
1 Egg; beaten

In a large skillet over medium heat, brown sausage; drain. Stir in 6 Tbsp of the pizza sauce.

Preheat the oven to 375øF. Separate the dough into 20 biscuits. Roll or press each round into a 4-inch circle.

Place 1 Tbsp meat mixture in center of each circle. Top each with cheese; press lightly. Fold dough over filling to form half-circle. Press edges together; seal and prick top with fork. Place on ungreased cookie sheet; brush with beaten egg. Bake 9 to 14 minutes or until golden brown.

Meanwhile, heat the remaining pizza sauce in a small saucepan over low heat until hot. Serve alongside empanadas for dipping.

Makes about 20 empanadas.
